From Cali, Colombia, we are visited by Chef Catalina Vélez, one of the most renowned chefs in the Colombian gastronomic scene and the owner of the restaurants Domingo Vereda and Domingo Amasa. Catalina is the founder of several projects that aim for territorial sovereignty through the respectful use of local products, native seeds, and those from regenerative agriculture and alternative crops, providing opportunities to vulnerable rural communities in Colombia and focusing on organic farming. On the other hand, Chef Martín Louzao, owner of Cocina Abierta and Caleta Café in Old San Juan, through his project Oriundo and with the support of a group of experts in various disciplines, has researched over 200 products that grow on the Island of Puerto Rico in order to include them in his gastronomic proposal. Through his dinners, he highlights and promotes the consumption of native ingredients and species from Puerto Rico, raising awareness about the importance of local consumption and contributing to the Island's food sovereignty.
