From humble beginnings in Coamo to becoming the visionary behind BarMuseo—one of Puerto Rico’s South region most distinctive cocktail bars—Carlos Borges has built a reputation for turning drinks into experiences.
He brought that passion and creativity to the Boricua Twist Cocktail Challenge, a spirited competition that highlights local talent, creativity, and bold flavors. The challenge invited participants to craft a cocktail using a mystery fruit and local rum in three minutes. More than a showcase of creativity, the competition sparked a deeper conversation about Carlos’s journey, the unique bar he brought to life, and the Island’s growing mixology scene.

Making Its Way to a Signature Concept
Carlos didn’t begin his career behind the bar. His story started with Sangría Borges —a sangría bottled product that reached supermarket shelves across Puerto Rico— but his passion for hospitality and bartending eventually led him to an opportunity in the municipality of Coamo to operate a small open-air bar in a food truck space known as Lote Cuatro.
That location laid the groundwork for what is now 5 years of BarMuseo, currently located within Coamo’s Museo Histórico (Coamo’s Historic Museum), where colonial architecture and modern cocktails collide. Carlos designed the space to feel open, warm, and inspired by European bar aesthetics, with metal, concrete, and wood blending into an interior that seats 30 people. The place also welcomes visitors with a vibrant patio to take in the natural views, resulting in a whole atmosphere that fuses heritage, local ingredients, outstanding ambiance, welcoming service, and new cocktail trends.

A Cocktail Inspired by Quintón Street
For the Boricua Twist Cocktail Challenge, participants were given two surprise ingredients. Carlos received Tres Clavos rum and mango, which he transformed into Hijos de Quintón—a cocktail inspired by the street where BarMuseo was born in Coamo and the new chapter of recognition and visibility the challenge brought. Although he admitted feeling both thrilled and nervous, the challenge brought out his best, leading him to craft a cocktail inspired by Puerto Rico’s summer season: refreshing and bursting with tropical flavor.
Finding Inspiration
Carlos didn’t learn bartending in a classroom—he learned it behind the bar, fueled by pure passion for the craft that drove him to master it on his own. After years in the pharmaceutical and healthcare industries, he traded lab coats for cocktail shakers as he immersed himself in self-study and traveled abroad to learn from other cocktail cultures, bringing back techniques and ideas that now define his menu. He soaked up trends, borrowed techniques, and brought them home to Coamo, where BarMuseo’s menu now celebrates local flavor at every pour—think rosemary and basil grown on-site, mixers from fresh island fruit, and close collaborations with local producers. His favorite local ingredient? Pineapple. For him, it works with everything, including rum, whiskey, and vodka.

Mocktails and Must-Try Drinks
BarMuseo also embraces the rising popularity of alcohol-free cocktails. One of their most popular options is “About the Garden”, made with cucumber cordial, basil, lime, mint, and non-alcoholic ginger soda. Refreshing and light, it’s a favorite among both locals and travelers. For first-time visitors ready to explore tropical flavors with a little kick, Carlos recommends the Mula de Quintón , a cocktail made with bourbon, local passion fruit, honey, and house-made ginger beer.
A Toast to the Future
While BarMuseo continues to thrive in Coamo, Carlos is already dreaming bigger. He’s planning to take the concept to other towns he loves—like Aibonito or Guayama—bringing BarMuseo’s experience to more people beyond the southern region. And he’s not about to compromise: his background in compliance and auditing fuels the meticulous standards he applies to everything. “From the ingredients to the service, it’s all about quality and care,” he says.
In terms of Puerto Rico’s cocktail scene, he considers that it’s entering a powerful era. He notes that mixologists and bar owners across the Island are not only experimenting with flavors and techniques, but also redefining what it means to serve a drink rooted in Boricua essence.
